Summer is the best time to make these cold popsicles when jam is available. Its dark purple sour sweet fruit is loved by more or less everyone. Since jam contains natural antioxidants, popsicles made with it are much healthier than regular ice cream.

Meta Ail will take 15-20 ripe jams, half a cup of sugar, half a teaspoon of roasted cumin powder, half a teaspoon of chat masala, 1 teaspoon of beet salt and half a lemon. Also take half a cup of water for sugar syrup. If desired, you can add jaggery, mint leaves or soaked sabja grains.

Meta Ai First wash the jam well and remove the seeds and coarsely chop it. Discarding the seeds will not result in bitterness after blending. Place the chopped jam in a blender jar for the next step.

Meta Ai In a pan add ½ cup of water and sugar and stir over low heat until the sugar dissolves completely. Remove from heat and cool the syrup completely, using hot syrup will discolor the jam. Add roasted cumin powder, chaat masala and pinch of salt in a Meta Ai blender.

Blend everything until a smooth paste. This spice is the real key to the kala khatta flavor. Strain the Meta Ai paste through a fine sieve into a large bowl to remove the husk and pulp.

Now pour cold sugar syrup and mix, then squeeze lemon juice. Taste and adjust the salt-sweetness. Pour Meta A mixture into popsicle molds, sprinkle with sabja or mint if desired.

Cover and freeze in the freezer for 6 to 8 hours. If you want to do it quickly, you can boil the jam, water, molasses and spices for 4-5 minutes, mash and strain it to make the same base. Once in Meta Aizm, dip the mold in lukewarm water for 10 seconds and take out the popsicle.

Sprinkle a pinch of salt or chaat masala on top while serving. The flavor stays good for up to 1 week if kept in an airtight box. Meta Ai
